COOKING

This is a rounded, medium sized, ridged apple with a bright green colour that fades to yellow as it ripens past its peak. It has coarse-grained, very white and acidic flesh and the apple has been described as almost astringent. This is quite a mysterious apple but first appeared in catalogues during the 1830s, with an improved version first being recorded in the early 1900s.
