Apples
Lady's Finger of Lancaster

COOKING

This was another apple that reached its height in popularity at the markets of Victorian England. The fruit have a distinctive, elongated, and some would say 'finger-like' shape. They tend to be medium to small and are largely yellow in colour, although they can develop reddish streaks on sun exposed faces. Generally Lady's Finger has soft flesh that tastes sweet and acidic, and is renowned for releasing a rich taste and holding its shape when baked. The apple was first observed and written of in 1824, although it is likely to be much older.
