COOKING
Norfolk Beefing, also known as "Norfolk Biffin" or "Catshead", date back to at least 1698 and are now primarily grown in heritage orchards of Norfolk or Kent. They're rather large apples with distinctive dark reddish plum coloured skin, and are known for their acidic taste. Originally these apples may have been raised to make sweet meat, and are now often used in the production of dried apple rings. They dry and store exceptionally well with greenish, firm grained flesh.
